Above the bustling streets of Sài Gòn, Rooty Bar has always been a place where city lights meet crafted flavors. This season, Rooty takes its storytelling a step further with the launch of six signature cocktails, each one inspired by a region of Vietnam, reimagining landscapes and memories into flavors that surprise and linger. From the emerald waters of Hạ Long Bay to the misty highlands of Đà Lạt, every cocktail on this new menu is both a drink and a journey.

Halong Emerald Waters

Halong Emerald Waters is light, refreshing, and floral, a perfect reflection of its namesake. Inspired by the UNESCO World Heritage site of Hạ Long Bay, where thousands of limestone karsts rise from jade-green seas, this cocktail awakens the senses with every sip. Made with VeDeDi Good Gin and “Flowers by the Sea” homebrew tonic, it carries the delicate perfume of coastal blossoms layered with crisp citrus, like sunlight dancing on emerald waters. 

Each Halong Emerald Waters is a miniature painting of the bays, where sunlight dances on the water and flowers bloom on the cliffs.  Light and refreshing, this cocktail is a conversational version of light sourness, delicate floral notes, and fresh citrus. Halong Emerald Waters is like a fresh sea breeze, awakening all your senses.

Saigon Libre

If Halong Emerald Waters is about serenity, then Saigon Libre is pure vibrance. Sài Gòn, a city that never sleeps, with vibrant energy and a bustling pace of life. Saigon Libre is a tribute to the freedom and openness of this city, where different cultures coexist and create a colorful picture. 

A bold reinvention of the classic Cuba Libre, this cocktail reflects the unstoppable energy of the city. Using VeDeDi Distiller’s Choice Whisky and “Spicebomb” homebrew cola — infused with cinnamon, star anise, and cardamom — Saigon Libre bursts with fizz, spice, and spirit. Each sip feels like the rhythm of Sài Gòn itself: fast, colorful, and unforgettable. 

Hanoi Flower Field

From the capital comes Hanoi Flower Field, a cocktail as poetic as its name suggests. Hà Nội in springtime is filled with blossoms, from the fragrance of hoa sữa on tree-lined streets to the vibrant flowers carried by street vendors. A cocktail full of floral scent, sweet mixed with a mild sour taste, and fresh fruit flavor. Hanoi Flower Field is a poetic work of art, taking you to a field of blooming flowers.

This inspiration is translated into a drink crafted with VeDeDi Good Gin, Sakura syrup, Yuzu, Umeshu, and a touch of Saline solution for balance. This unique combination brings a charming fragrance, while sakura and yuzu create a sweet, fresh highlight, recreating a field of flowers blooming in spring.

Sapa Spices Sour

Traveling north into the highlands, to Sa Pa – a misty town hidden in the majestic mountains, where terraced fields curve and the scent of mountain spices permeates the air. Sapa Spices Sour is a fusion of wild mountain flavors and the sophistication of the art of mixing.

A creative twist on the Whiskey Sour, it blends VeDeDi Distiller’s Choice Whisky, Lemon Juice, Oriental Spice Syrup, and Albumen for silkiness. The spice syrup, cooked with cinnamon, clove, star anise, and cardamom, delivers the comforting aroma of local markets, while the citrus lifts the palate. Tangy, cozy, and inviting, it is a cocktail that tastes like Sapa itself — mysterious yet welcoming.

Ben Tre Coconut Cold Brew

Further south, the riverside lands of Bến Tre, where green coconut trees stretch out to the sea and the aroma of coconut coffee spreads everywhere, inspire the Ben Tre Coconut Cold Brew. Known as Vietnam’s “land of coconuts,” this region’s flavors are reimagined in a cocktail that is rich, nutty, and smoky.

A bold combination of VeDeDi Distiller’s Choice Whisky, Big Peat, Vededi Creme de Cacao, Frangelico, and Nitro Cold Brew Coconut Coffee. The smoky taste of Laphroaig 10 is reminiscent of the artisanal coffee roasting process, while the coconut coffee and liqueurs create a rich, creamy, and deep flavor, bearing the mark of Ben Tre.

Dalat Shroombom

Finally, Dalat Shroombom takes guests deep into the pine forests and mist of Đà Lạt, a dreamy city with a cool climate all year round, filled with mysteries. A glass of Dalat Shroomboom is like an adventure deep into the forest, discovering unexpected and fascinating things.

Earthy, daring, and unlike anything else, this cocktail is made with Truffle Oil Fat Wash Good Gin, Feta Cheese Infused Mancino Bianco, and Shiitake Sake. The result is a bold, complex, and “funky” drink, layered with umami richness that lingers long after the glass is empty. Just as Đà Lạt is known for its secrets and mysteries, Dalat Shroombom surprises with flavors that are both rustic and refined, crafted for those who crave something truly unique.

The newly introduced cocktails form more than a menu; they are Rooty’s tribute to Vietnam. Each glass is carefully composed, drawing from landscapes, traditions, and ingredients to create an experience that is both local and cosmopolitan.
