Anan – founded by chef Peter Cuong, Anan brings diners street food skillfully honored through modern processing techniques. The restaurant is located in the bustling traditional market of the center of Saigon, but a contrast that also cleverly tells the story and culinary philosophy of the chef, that every dish can be a masterpiece if it is harmoniously connected between traditional values and modern culinary quintessence. Anan is open from 5pm to 11pm at 89 Ton That Dam, Ben Nghe Ward, District 1, HCMC

Nephele – Nephele’s tasting menu is selected by chef Francis Tran from many different regions according to the seasonality of each type of food as well as each region. Through boundless creativity, local products are flexibly and sometimes boldly recreated to honor the quintessence of each ingredient. Each menu of the restaurant is a culinary journey filled with countless surprises and delights. Nephele is located at 125/12 Nguyen Cuu Van, Ward 17, Binh Thanh District and only serves dinner from 6:00 PM to 11:00 PM and is closed on Sundays.

Quince Eatery – When the small door of the colonial-era townhouse in Chinatown – District 1 is opened, step inside to a large wine bar and a brightly decorated interior under soft lighting. Since opening in 2018, Quince has always been known to local luxury diners with a culinary philosophy that emphasizes simplicity, from wood-fired recipes, dishes made from premium ingredients that are meticulously and delicately prepared. Quince is open daily from 5:30 PM to 10:30 PM at 37bis Ky Con, Nguyen Thai Binh Ward, District 1, Ho Chi Minh City.

Oryz – Chef Chris Fong, who is also the owner of Oryz restaurant, recreates Chinese cuisine with a completely new style, skillfully combining heritage stories. Most of the dishes here honor sophisticated fermentation techniques, with meticulous incubation, processing and fermentation stages that bring the flavor of time, as a testament to modernity coexisting with centuries-old cooking techniques. The restaurant is located at 51 Tran Nhat Duat, Tan Dinh Ward, District 1, Ho Chi Minh City and is open from 5:00 p.m. to 11:00 p.m. every day except Monday.
